Through lecture, discussion and video, we will go beyond the basics of whole foods/plant-based living. We will learn about the early pioneers of the whole foods/plant-based movement, human physiology and diet, food politics, food myths, health issues and the impact of our food choices on animals and the environment.  

Course Outline

For the past seven years, Bonnie Wheeler (bonniewhee@gmail.com) has been committed to a whole foods/plant based diet following the guidelines of Drs. Greger, Esselstyn, McDougall, Fuhrman, Ornish, Barnard, et al, who present this way of living as optimal for human health and longevity as well as environmental sustainability. She loves the new culinary adventures this way of eating offers.
